To celebrate National Dessert Day on Friday I’ve decided to treat you with one of my favourite recipes. Hope you enjoy!
Ingredients
Brownies:
- 140g butter (unsalted)
- 280g caster sugar
- 180g cocoa powder
- 2tsp vanilla extract
- 2 large eggs
- 125g plain flower
Filling:
- 2 packs of Oreos
Cookie Dough:
- 115g butter (unsalted)
- 55g brown sugar
- 165g caster sugar
- 1 large egg
- 1 1/4 tsp vanilla extract
- 170g plain flour
- 1tsp baking powder
- 1 cup of chocolate chips
Recipe
Brownie Recipe:
- Melt all of the butter in a pan
- Mix the sugar and cocoa powder in with the melted butter
- Take off the heat
- Add the beaten eggs and vanilla extract
- Sieve in the flour gradually and mix
- Leave to one side
Cookie Recipe:
- EITHER mix butter, both sugars, egg, flour, baking powder and vanilla extract in a food processor
- OR cream together the butter (should be at room temp.) and both types of sugar
- Mix in the beaten egg and vanilla extract
- Sieve in flour and baking powder and mix
- For both ways: Fold in the chocolate chips
Assembly:
- Line a baking tray with baking parchment
- Fill bottom of the tray with cookie dough
- Layer as many Oreos that will fit in a single layer (preferably more than this if you have them)
- Pour the brownie mixture on top
- Bake at 180 degrees C for around 30 minutes (or until a knife comes out clean)
- Either enjoy them whilst still warm for a softer melted texture or leave them in the fridge for a few hours for more of a crunch – the batch below was left in the fridge overnight
Optional additions
- 5 minutes before the brownies are done baking, cover them with marshmallows – however if adding marshmallows it’s best to eat whilst still warm
- Add anything else you want! I’ve seen this recipe done with all sorts of additions such as caramel, peanut butter, marshmallow fluff and even creme eggs
Cheat tip
- If you want to try these but don’t fancy cooking the brownie mixture and cookie dough from scratch, just cheat and use ready made mix from a shop!
- Just make sure you check baking times on the packaging – for this one below the brownies needed cooking for longer so we half baked them first before adding the layer of Oreos and cookie mix on top
